    Here is what you'll need!
    The ShackBurger
    Serves 4
    INGREDIENTS
    4 hamburger potato buns
    4 tablespoons butter, melted
    4 tablespoons ShackSauce (recipe below)
    1 lb very cold ground beef, divided into 4 pucks
    ½ teaspoon Our Salt & Pepper mix (recipe below)
    4 slices American cheese
    4 pieces green leaf lettuce
    8 ¼-inch slices ripe plum tomato
    ShackSauce
    ½ cup Hellman’s mayonnaise
    1 tablespoon Dijon mustard
    ¾ teaspoon Heinz ketchup
    ¼ teaspoon kosher dill pickling brine
    Pinch of cayenne pepper
    Our Salt & Pepper Mix
    ½ cup kosher salt
    ½ teaspoon freshly ground pepper
    PREPARATION
    Heat a cast-iron griddle over medium-low heat until warm. Meanwhile, open the hamburger buns and brush the insides with the melted butter. A soft brush is helpful here. Place the buns buttered side down on the griddle and toast until golden brown, 2 to 3 minutes. Transfer buns to a plate. Spoon the sauce onto the top bun. Add a piece of the lettuce and two slices of tomato.
    Increase the heat to medium and heat the griddle until hot, 2 to 3 minutes.
    Evenly sprinkle a pinch of Our Salt & Pepper Mix on top of each puck of meat.
    Place the pucks on the griddle, seasoned side down. Using a large, sturdy metal spatula, firmly smash each puck into a ⅓-inch-thick round patty. Pressing down on the spatula with another stiff spatula helps flatten the burger quickly. Evenly sprinkle another big pinch of Our Salt & Pepper Mix.
    Cook the burgers, resisting the urge to move them, until the edges beneath are brown and crisp, and juices on the surface are bubbling hot, about 2 ½ minutes. Slide one of the spatulas beneath the burger to release it from the griddle and scrape up the caramelized browned crust. Use the other spatula to steady the burger and keep it from sliding. Flip the burgers. Put the cheese on top and cook the burgers 1 minute longer for medium. Cook more or less depending on your preference.
    Transfer the cheeseburgers to the prepared buns and enjoy.

    I remember watching the line cam in my office to see how long the line at Shake Shack was, and as soon as it seemed short enough, my friends and I would run down to Madison Square Park to grab some burgers and shakes. I did wait an hour in half in line once on a Saturday, though, for one of their special burgers. Worth it. And so glad they're in L.A. now since I've moved here.

    Is anyone else bothered by him saying hamburger when there's cheese on it? That's a cheeseburger, boi.

    • @mohammadalbader7015
      @mohammadalbader7015 7 лет назад +13

      Miriam Harris So...you aren't bothered by the fact that it's actually a beef & not a "ham" ? Huh 🤔

    • @margo_egg
      @margo_egg 7 лет назад

      MK BQ That's why it's a CHEESE-BURGER There's no HAM in a burger. And there's CHEESE on it.

    • @mohammadalbader7015
      @mohammadalbader7015 7 лет назад +2

      Miriam Harris You misunderstood my point. I acknowledge that it's a cheeseburger and yes it should be called a cheeseburger but imagine if what you've seen was not a cheeseburger but just a simple plain beef burger, wouldn't you be bothered that the guy called it a ham? You know what a ham is, right? It's pork, not beef.

    • @margo_egg
      @margo_egg 7 лет назад

      MK BQ Yes, I'd be bothered if he was calling it a hamburger if it were a regular beef burger. But that's not the case here.

    • @mohammadalbader7015
      @mohammadalbader7015 7 лет назад +2

      Miriam Harris I'm going to be sincerely honest with you. You take this quite seriously even though it's just a cheeseburger... literally, a cheese on top of a beef...
      Your first reply with capitalised letters indicated as if I have somewhat emotionally attacked you or something
      For heaven's sake, get a grip
      I was only trying to interact and most importantly to notify you that the guy on video made an error by calling it a ham which clearly is not and I thought you'd also be bothered with it therefore I just wanted to know, that's all
      Why you being so aggressive?
      Get a grip for pete's sake and goodbye!

      Normally that is true. But since the squish it at the start when the fats haven't melted yet, and they use high heat to crisp the surface before it goes dry inside, the party stays moist inside. I know, cuz I tried it before.

    • @Tranquil789
      @Tranquil789 7 лет назад +4

      TopCat The fat in the burger hasn't melted yet, so you don't waste any juices doing it this way.

    • @James-jt6dn
      @James-jt6dn 7 лет назад +9

      No, it didn't. Stop spreading misinformation and spend a whole two minutes looking stuff up so you can stop being so damn ignorant. The amount of juice loss is directly proportional to how long after placing the meat on the grill, and if you press on it right after putting it on, there's almost no juice loss.

    • @topcat104
      @topcat104 7 лет назад +1

      Burgers are supposed to be cooked well done. It's actually the law here in Canada. I've been a cook for quite a few years, I know a few things.

    • @PhantomEdX
      @PhantomEdX 6 лет назад +1

      The fuck? I've recently been to a very popular restaurant here in Montreal and they cook their hamburgers pink. It was delicious, I had no problems whatsoever after that and I will for sure eat there again. I dunno what kind of law you pulled out of your ass, but it's not a Canadian law.

    • @curtiswaters7415
      @curtiswaters7415 6 лет назад +2

      Yes, it is in fact law in Canada. Beef must be cooked to 71 degrees celsius. I'm a fucking cook at a burger restaurant, dude, are you seriously going to argue this with me? The restaurant you went to violated food safety laws, I wonder what other rules they are breaking. Eating ground beef any less than well done simply is not safe. Period.

    Yup that's how we basically make the shackburger. Except we don't salt/pepper, smash, salt/pepper again. Just smash, salt and pepper. Also flip after 2 minutes on high heat (grill is as hot as 400 degrees)
